South Beach Phase 1 Recipes Please!?

Hi so Im just wanting hopefully some of your simpler recipes. Im not much of a cook and since it sjust be dieting and not my husband, plus I have to make food for your 2 year old. It would be grat if you had some good b,l, and dinner recipes. Oh and desserts. I know all about the recotta recipes and usually have those but just wondering about others….. thanks so much guys these would be very helpful.

I like spice if that helps, like curry….. but anything really!!!

And I dont do quiches so dont even mention them…lol!!!

Mock French Toast – Phase 1-3

Mix together:
2 eggs
1/4 cup part-skim ricotta cheese
1 tbsp vanilla extract
sugar substitute to taste
1/4 tsp cinnamon
1/4 tsp nutmeg or pumpkin pie spice (optional)

Spray a skillet with non-stick 0-calorie buttery spray, and preheat.

Spoon batter by ladlefulls into skillet and cook like a crepe or thin pancake. It takes a little practice to get good at flipping them, but practice makes perfect. Cook both sides and serve with sugar-free syrup and (optional) 2 slices of turkey bacon per person.

Fake French Toast Phases 1-3
2 eggs
1 TBS water
1 pkt Splenda
dash of cinnamon

Beat the eggs (by hand is fine) in a small bowl. Add the rest and beat some more. Spray a small fry pan with your favorite spray. Heat on medium high until a drop of water would sizzle. Pour eggs into pan and cover. Cook until set. (Covering the pan makes this light and fluffy.)

Serve immediately with a little no sugar syrup … on phase 2 this would be great with fruit.

Cheesy Ham Omelet ~ Phases 1-3
2 eggs
2 Tbsp. fat free milk
3 slices OSCAR MAYER Thin Sliced Smoked Ham, chopped
1 tsp. thin green onion slices
dash of pepper
1/4 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese

Beat eggs and milk in small bowl with fork until well blended. Add ham, onion and pepper; mix well.

Spray 8-inch nonstick skillet with cooking spray. Pour egg mixture into skillet; cover. Cook on medium heat 6 minutes or until egg mixture is set but top is still moist.

Sprinkle cheese evenly onto half of omelet. Using spatula, fold egg mixture over filling; cover. Remove from heat; let stand 1 minute. Cut in half to serve.

Summer’s Bounty Grilled Shrimp Salad Phases 1-3

1/2 cup SOUTH BEACH DIET™ Italian Dressing
2 Tbsp. soy sauce
2 tsp. grated lime peel
6 cups torn salad greens, such as arugula, baby spinach, radicchio
1 cup thin zucchini or yellow summer squash slices
1 cup cherry tomatoes, halved
1/2 cup thin red onion slices
1 lb. large shrimp, peeled, deveined
1/4 cup PLANTERS Salted Almonds, coarsely chopped

DIRECTIONS
Preheat grill to medium heat. Combine dressing, soy sauce and lime peel. Remove 1/3 cup of the dressing mixture; place in small bowl. Refrigerate until ready to use. Toss salad greens with the zucchini, tomatoes and onions in salad bowl; cover. Refrigerate until ready to serve.

Thread shrimp evenly onto wooden or metal skewers. Grill 5 to 6 min. on each side or until shrimp turn pink, turning occasionally and brushing with the remaining dressing mixture.

Remove shrimp from skewers; place over the salad. Drizzle with the reserved 1/3 cup dressing; toss to coat. Sprinkle with the almonds.

Layered Tuna Salad Phases 1-3

1 lb. romaine or bibb lettuce, torn into bite-size pieces
2 medium tomatoes, sliced
2 cans (6 oz. each) white tuna in water, drained, flaked
2 Tbsp. sunflower kernels
1/3 cup SOUTH BEACH DIET™ Italian Dressing

Layer lettuce, tomatoes, tuna and sunflower kernels in large salad bowl.
Add dressing just before serving; toss to coat.

for tuna (out of the can)
1 can of cannellini beans (rinsed & drained)
1 cup extra virgin olive oil
2-6 cloves garlic (depending on your taste)
juice from 1/2 – 1 lemon (depending on your taste)
salt & pepper (to taste)

Blend until smooth in a food processor or blender.

You can also add fresh flat-leaf (italian) parsley, if you like.

Use this mixture as a spread on sandwiches or with raw veggies.

To mix with tuna, flake a can of italian light tuna in olive oil into the bean mixture & stir well. Add chopped red onion & celery, if you like.

Cherry Tomatoes Phase 1
10 cherry, grape, or small heirloom tomatoes (or mix thereof)
2 teaspoons dried oregano
2 teaspoons balsamic vinegar
1 tablespoon olive oil
1/4 teaspoon salt
1 pinch ground black pepper
DIRECTIONS
Halve tomatoes and toss with oregano, oil, vinegar, salt, and pepper. Let sit for a minute or two to let flavors develop. Enjoy.

Cheddar Cheese Kabob Phases 1-3
1 oz. CRACKER BARREL 2% Milk Reduced Fat Sharp Cheddar Cheese
2 cherry tomatoes
1 small wedge green pepper

Cut 2 (1/4-inch-thick) slices from block of CRACKER BARREL 2% Milk Reduced Fat Sharp Cheddar Cheese, then cut each slice diagonally in half to make 4 triangles.

Insert cheese pieces on small bamboo skewer alternately with 2 cherry or grape tomatoes and 1 small green pepper chunk.

Crunchy citrus nuts Phases 1-3
egg white
grated peel from 1 medium orange (about 2 Tbsp.)
grated peel from 1 medium lemon (about 2 tsp.)
1/8 tsp. ground cinnamon
1 can (11.5 oz.) PLANTERS Mixed Nuts
1 Tbsp. granular no calorie sweetener

DIRECTIONS
Preheat oven to 325°F. Beat egg white in medium bowl with orange peel, lemon peel and cinnamon until frothy. Stir in nuts until evenly coated.

Spread into lightly greased 15x10x1-inch baking pan.
